Push-Up Pops (06/03/2011)

I was on vacation last week and didn’t tell you. My Bad.

We went to visit my parents in Virgina. It was a long drive from IL, but well worth it.  I made cookies, the kids got to ride my Dad’s riding lawn mower, there was some napping involved, we stopped at the Albanese Candy Factory on the way home. It was a good vacation!

But I am sorry I left you hanging and that there was no blog post to inspire you and no witty remarks to brighten your day (because I AM witty).

I am also sorry that this post might be lacking in the overly creative department, as we just got home yesterday.  And let me tell you, it’s difficult to be inspiring and witty when there is laundry/dishes/vacuuming/unpacking/over-tired whining children/etc., etc.

Though I did manage to make something fun and summery for you today, and it started with these:

That’s right – Push-Up Pop containers!

Theses babies are all the rage.  And I, being the band-wagon jumper that I am, ordered a box.

I have seen them filled with cake (visit Cake Shooters) and filled with Jello (visit The Party Animal) and while both are amazing, and I’m sure I will try them in the future, I just didn’t have the time today. I went with EASY.

It started with the idea from Taste of Home and their Watermelon Sherbet cake:

I layered Lime sherbet then vanilla ice cream and then raspberry sherbet mixed with mini chocolate chips.

It’s not quite the same, but you get the idea. It’s light and incredibly refreshing – perfect for summer BBQ’s!

  2. The push-up pop containers are so cool! I say layers of cake or cookie crumbles, icing, ice cream & thick fudge sauce…an ice cream cake push-up pop…yum!
